Apple Butternut Soup

Ingredients:
Butternut Squash: 1 Large (Cubed, peeled, seeded. About 2 medium squash or 8 cups)
Apple: 1 Large (peeled and chopped)
Onion: 1 Large (cut into 1 inch pieces)
Brown Sugar: 2 Tablespoons
Salt: 3/4 teaspoon
Cinnamon: 3/4 teaspoon (ground)
Black Pepper: 1/8 teaspoon
Chicken Broth: 1/2 Cup (original recipe called for 3 cups)
Milk: 1/4-1/2 Cup (original recipe called for 3/4 Cups)
Yogurt: 6 oz container (plain Greek, fat free suggested)

Directions:
1. In Dutch oven, mix squash, apple, onion, brown sugar, salt, cinnamon and pepper. Add broth. Cover; heat to boiling over medium-high heat. Reduce heat; simmer about 20 minutes or until squash is tender.
2. In blender or food processor, place one-third of mixture. Cover; blend until smooth. Repeat twice to use up remaining soup. Return to Dutch oven, stir in milk and yogurt. Heat over low heat, stirring occasionally, just until heated through. Ladle into bowls; sprinkle with chives.

Notes:
 12/18/12 I actually took a good sized squash, cut it in four pieces, took out seeds then added minced apple, onion powder, cinnamon, salt, pepper and brown sugar.  Then wrapped it in foil and baked it at 400 for at least 1 hour.

I then scooped everything out of the shell and put it in my mixer (because my blender is really bad!). I mixed it with about a half can of chicken broth, 1/4-1/2 cup milk, and two large serving spoons of sour cream (because I didn't have yogurt). I added a little onion salt here to taste and abt 1/8-1/4 tsp poultry seasoning. I then stuck it in the slow cooker till we were ready to eat it.

The original recipe called for chives but I don't really care for them much so I didn't include them.

I was worried that it would not be a large enough meal for my bunch so I looked it up on line and found a wonderful article at www.familyfood.hiddenvalley.com. It mentioned to serve with a crusty bread advising a garlic bread as adding a balance to the sweetness of the soup.  It suggested serving with grilled cheese sandwiches, an Italian salad, herb-ed chicken, or pork chops. It also said sage or rosemary can be a nice seasoning for this soup.

My family did ok with it.  Emily Christensen said her Grandmother makes something like this but adds Banana and pineapple juice for a sweeter flavor.  Maybe try those instead of the brown sugar because I wasn't sure I liked that flavor.
